A perpetual reserve program is a dynamic approach to aging wine, inspired by the traditional Solera system. Each year, as wine is drawn to craft a new blend, it is replenished with younger wine, ensuring the tank always contains a portion of the oldest vintages. This continuous process enriches the blend, adding layers of complexity that deepen with every passing year.
The Perpetual Reserve NV.01 embodies the essence of Westborn, marking a milestone as the first non-vintage wine in our collection. This exceptional blend combines 50% 2020 vintage wine, imparting vibrant energy and verve, with 50% perpetual reserve, which contributes depth, power, and the nuanced complexity that only time can bestow...The Perpetual Reserve NV.01 shows a vibrant and expressive profile, showcasing an elegant blend of fruit and nuanced complexity. On the nose, inviting aromas of fresh pear, yellow apple, and peach are intertwined with subtle hints of vanilla, warm bread and roasted hazelnuts. Delicate white flowers add a fragrant floral lift, contributing to the wine's aromatic finesse. On the palate, the wine is medium to full-bodied, delivering a bright and incisive character and seamless texture. The bright acidity provides a refreshing backbone, perfectly balancing the fruit notes. The finish is long and satisfying, leaving a lingering impression of the wine's vibrant fruit and delicate, nutty undertones.

Looking at their NV Perpetual Reserve NV.01, it's based on 50% Chardonnay, 42% Pinot Noir, and the rest Pinot Meunier that's based largely on the 2020 vintage (50%) yet includes a smattering of other vintages, all brought up 50% in barrel. It was aged 3 years in bottle and saw 4 grams of dosage. It has a gorgeous nose of toasted bread, white flowers, toasted notes, and more stone fruits. This carries to a medium-bodied wine that has a layered, elegant mouthfeel, fine bubbles, plenty of mid-palate depth, and a great finish. Compared to the other releases in the lineup, it's a more medium-bodied, chiseled, focused, mineral-driven cuvee. I'd give bottles a year or two, then enjoy over the following decade.
