The harvest of grapes is chosen upon sensory evaluation. When there is harmony of flavor, texture, color and mouth feel we hand pick the grapes and sort them in the vineyard. A traditional Burgundian technique of lees stirring and barrel aging allows the wine to develop richness and elegance. After cold settling in tank, only native yeast was used during primary fermentation and native malolactic fermentation occurred in barrel. No fining or filtering occurred. Stunningly beautiful with an integrated twist of citrus, white flowers and a touch of tropical notes.
